2 gourmet recipes based on organic lavender honey

What could be better than accompanying our moments of family, sharing, rest and relaxation with a cooking workshop?

For the holidays we like to have a little "extra" to offer at the end of the meal, we often take out the chocolates and sometimes we abuse them too much. This year for me, in the cupboard the chocolates, my little "extras" will be homemade, madeleines with organic honey &organic honey/nut muffins.

My mouth is watering already!

I therefore offer you the two recipes to make these little sweets!

Preparation for about 25 madeleines with ORGANIC lavender honey:

For the ingredients you will need melted butter (120 grams), flour (150 grams), powdered sugar (135 grams), baking powder (1/2 sachet), eggs (three) and of course of our organic honey (1 to 2 spoons according to preference)

Let's move on to the preparation, as at the beginning of each recipe, preheat your oven to 210° (th. 7). To start, in a bowl, break the eggs, add the sugar and honey then whisk everything by hand until the mixture whitens.

Then, add to the mixture, the remaining ingredients, that is to say, the flour, the yeast and the melted butter. Depending on your preferences, you can add a lemon zest. Be sure to mix everything well.

It is preferable and more practical to use silicone madeleine molds, for my part that is what I use. If you don't, then you will have to butter your molds.

You will then fill your molds by half.

You will then have to wait between 5 to 15 minutes for the madeleines to be cooked and above all golden brown!

Preparation for about 10 Organic Honey/Walnut Muffins:

For the ingredients you will need softened butter (70 grams), flour (210 grams), brown sugar (60 grams), baking powder (less than 1/2 sachet), eggs (two and they will have to be beaten), baking soda (1 teaspoon), some nuts and of course organic honey (2 to 3 tablespoons of honey (depending on preference)).

Let's get down to the preparation, as above, we start with the oven step, preheat your oven to 200° (th.7).

We need two salad bowls for this recipe, since there will be two separate preparations.

In the first preparation you will have to mix the eggs, the butter, the nuts (which you will have crushed) and the honey.

In the second preparation we will mix the sugar, baking soda, flour and baking powder.

Mix the second preparation with the first preparation gradually (ideal well trick), keep a homogeneous paste and not too liquid.

Once the dough is finished, it will have to be poured into our moulds, the same as for the madeleines, use silicone molds (if you don't have any, butter them), then pour your dough 2/3 full.

We will let the muffins rise and bake for 15 to 20 minutes, so that they keep their softness but have a golden, crispy edge on the top and sides.

I can already imagine myself, surrounded by my family, tasting these wonderful sweets.
