To produce high-quality coconut oil, the fresh flesh is mechanically pressed—not dried, which yields copra oil.
Naturally solid at room temperature, it melts into a liquid when warmed.
Its benefits are impressive: Cultivation typically avoids fertilizers or pesticides. Opt for virgin, cold-pressed, unrefined varieties to preserve its superior quality, delightful fragrance, and flavor.
That said, challenges exist: Harvesting involves climbing great heights, sometimes exploiting monkeys. Long-distance importation to Europe also raises environmental concerns.
