Goat Cheese Toast with Figs, Pistachios, and Organic Lemon Tree Honey

Ingredients (for 4 slices):

  • 1 wholemeal or semi-wholemeal baguette
  • A few leaves of lamb’s lettuce
  • 200g fresh goat cheese
  • 100g dried figs
  • 1 handful unsalted shelled pistachios
  • 2 teaspoons Mary Family lemon tree honey
  • Olive oil

Cut 4 long slices from the baguette and brush with olive oil. Grill under the broiler for 3 minutes. Top with lamb’s lettuce, crumbled goat cheese, chopped figs, and pistachios. Finish with a drizzle of lemon tree honey on each slice.

Orange Salad with Saffron and Organic Lemon Tree Honey

Ingredients (serves 6):

  • 8 oranges
  • Juice of 2 oranges
  • 40g brown sugar
  • 3 tablespoons lemon tree honey
  • 30 saffron threads

Infuse saffron in the orange juice. Peel and slice the 8 oranges into 5mm rounds, removing white pith and seeds. Arrange overlapping in a large dish. Mix honey with the saffron-infused juice, sprinkle oranges with sugar and juice. Cover and chill for 2 hours.
